Ingredients

  • 2 large potatoes, peeled and grated
  • 1 large carrot, peeled and grated
  • 1/4 red onion, grated
  • 2 teaspoons of Thai red curry paste
  • small handful of chives, chopped
  • 1 large egg, beaten
  • 1 large sweet potato
  • 1 large knob butter
  • Grated cheese to taste (optional)

Method

  • Grate potatoes, carrot and onion into large bowl
  • Add Thai red curry paste, chopped chives and beaten egg
  • Mix mixture until well combined
  • Place baking paper onto a flat oven tray and spread mixture over the paper to an even thickness
  • Place tray in a pre-heated oven for 30 minutes at 180 degrees Celcius
  • Peel and chop sweet potato into even pieces and steam until cooked
  • When sweet potato is soft remove from heat and add a large knob of butter and mash till smooth
  • Remove mixture from oven after 30 minutes and spread the mashed sweet potato over the cooked rosti and roll up lengthwise
  • (Optional) Sprinkle cheese over the top of roll and place back in oven for 10 minutes or until cheese is melted… ENJOY!
